Increasing the earthy flavor of beets?
I enjoy the "earthy" flavor of beets -- I would like to know:
What way(s) of preparing beets result in the most earthy flavor?
And are certain types of beets known for tasting earthier?

Bitter roasted beets
I just roasted some beets in the oven (as usual) but they turned out really bitter. Any idea why or what can I do to save them?

Are beets related to turnips?
We recently made fresh beets, which was a new experience for me, and I was surprised to discover that a freshly cooked fresh beet tastes quite like a similarly cooked turnip. Is there any connection between the two foods?

beet stock shelf life
How long will beet stock be good in the fridge and is it obvious (odor or otherwise) if it's bad. I've had this beet stock for a while and I want to drink it but I'm a little nervous.
It smells fine and looks fine.

Beets have a fungus
I bought some beets at a farmers market today but now find out they have a fungus (brown spots on yellow leaves). I will not eat the greens but are the beet roots edible?
